Lactic Acid is widely utilized in preparation of sour milk products including yogurt, kefir, & cottage cheese. It acts as acidity adjusting agent in topical pharmaceutical preparations and cosmetics. This is an organic white colored compound which is water soluble in nature and has boiling point of around 122 degrees Celsius. It is one of the main ingredients in sour beer and sourdough bread. Lactic Acid has chemical formula C3H6O3 with molar mass of 90.08 g/mol. It is most commonly produced by bacterial fermentation of carbohydrates under controlled conditions or from acetaldehyde by chemical synthesis.
